Line a baking sheet with parchment paper and draw a 7 inch (18 cm) circle on the paper.&lt;br /&gt;&lt;br /&gt;In the bowl of your electric mixer, with the whisk attachment, beat the egg whites on medium-high speed until they hold soft peaks. Start adding the sugar, a tablespoon at a time, and continue to beat until the meringue holds very stiff peaks. (Test to see if the sugar is fully dissolved by rubbing a little of the meringue between your thumb and index finger. The meringue should feel smooth, not gritty. If it feels gritty the sugar has not fully dissolved so keep beating until it feels smooth between your fingers). Sprinkle the vinegar and cornstarch over the top of the meringue and, with a rubber spatula, fold in.&lt;br /&gt;&lt;br /&gt;Gently spread the meringue inside the circle drawn on the parchment paper, smoothing the edges, making sure the edges of the meringue are slightly higher than the center. (You want a slight well in the center of the meringue to place the whipped cream and fruit.)&lt;br /&gt;&lt;br /&gt;Bake for 1 hour 15 minutes or until the outside is dry and takes on a very pale cream color. Turn the oven off, leave the door slightly ajar, and let the meringue cool completely in the oven. (The outside of the meringue will feel firm to the touch, if gently pressed, but as it cools you will get a little cracking and you will see that the inside is soft and marshmallowy.)&lt;br /&gt;&lt;br /&gt;The cooled meringue can be made and stored in a cool dry place, in an airtight container, for a few days.&lt;br /&gt;&lt;br /&gt;Just before serving gently place the meringue onto a serving plate. Whip the cream in your electric mixer, with the whisk attachment, until soft peaks form. Sweeten with the sugar and vanilla and then mound the softly whipped cream into the center of the meringue. Arrange the fruit randomly, or in a decorative pattern, on top of the cream. (1 g) almond extract&lt;/span&gt;&lt;span style="font-size:85%;"&gt; &lt;/span&gt;&lt;span style="font-family:trebuchet ms;font-size:85%;"&gt;2 cups (250 g)  flour.&lt;/span&gt;&lt;span style="font-size:85%;"&gt;  &lt;/span&gt;&lt;span style="font-family:trebuchet ms;font-size:85%;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Methods:&lt;/span&gt;&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;span style="font-weight: bold;"&gt; &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family:trebuchet ms;font-size:85%;"&gt;1. Preheat the oven to 350°F  (175°C). Whisk the flour, baking powder, and salt together.&lt;br /&gt;2.  Select a mixing bowl that is large enough to hold all the  ingredients and still provide enough room to fold them together without making a  mess.&lt;br /&gt;3. Break two large eggs into the large mixing bowl and  add the sugar. Whisk to combine.&lt;br /&gt;4. Continue whisking the sugar  and eggs until the color has lightened to a pale yellow. To have better  biscotti, used electric mixer and beat for 5 minutes.&lt;br /&gt;5. Add the  vanilla extract, almond extract, orange zest, and slivered almonds to the egg  and sugar mixture. Using a spatula, stir once or twice to combine.&lt;br /&gt;6.  Working in batches, pour enough of the flour mixture to cover the  surface of the egg mixture. Use a spatula and fold in the flour using as few  strokes as possible. Add more flour and fold until all the flour has been  integrated. Folding is performed by using a spatula to scoop from either the  side or the middle of the mixture and lifting and "folding" (basically movign  the spatula laterally and then flipping it over to drop the mixture) onto  another part of the mixture. Rotate the bowl each fold&lt;br /&gt;7. The  key is not to stir or mix the flour with the liquid too much. Gently folding  helps prevents the formation of too much elastic gluten. The presence of too  much gluten will defeat the delicate and crisp texture we are trying to achieve  and result in a possibly chewy product.&lt;br /&gt;8. Split the batter in  half and place the two rough balls onto a non-stick baking sheet. With your  hands, form the batter into two loaves of approximately 10-in. (25 cm) by 2 in.  (5 cm) each. Wetting your hands just a bit may help with molding the loaves  since the batter will be fairly sticky.&lt;br /&gt;9. Bake the loaves at  350°F (175°C) for 40 minutes (rotating the pan once after twenty minutes). The  loaves should have just started to crack. (Don't wait for big cracks or you  might overcook the biscotti.)&lt;br /&gt;10. Remove the loaves from the  pan and place them on a &lt;a title="http://www.amazon.com/exec/obidos/ASIN/B00091PN9S/ref=nosim/themichaelupdate" href="http://www.amazon.com/exec/obidos/ASIN/B00091PN9S/ref%3Dnosim/themichaelupdate" target="_blank"&gt;wire rack&lt;/a&gt; to cool for at least ten minutes. This cooling step  is extremely important to your non-dominant hand as it will be holding the loaf  while you cut it in the next step.&lt;br /&gt;11. After some cooling, move  a loaf to a cutting board and cut diagonally into 3/8-in. (1 cm) thick pieces.  Do the same to the other loaf. The interior of each biscotto should still be  just a little moist (while the exterior is nice and hard). The crust of the loaf  will probably be quite hard, so use a large serrated knife such as a bread knife  for this job.&lt;br /&gt;12. Place the biscotti with a cut side facing up  on a half sheet pan and bake for 8 minutes. Remove the pan and flip all the  biscotti over so the other cut side is now facing up. Bake for another 7  minutes. Set all the pieces on a wire rack to cool making sure that none of the  biscotti are touching each other. If the biscotti are placed too close together,  they could get a little soft or soggy as they cool.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;* Nota:&lt;br /&gt;1.  Kacang yang boleh digunakan untuk biscotti adalah almond, pistachio &amp;amp;  hazelnut and give better result than other nuts.&lt;br /&gt;2. Amount kacang bergantung  kepada citarasa masing2 asal jangan kacang lebih berat tepung sudahla...&lt;br /&gt;3.  Pistachio sahaja yang boleh berganding dengan dried fruit seperti dried  cherries, dried cranberries, dried apricot dan juga cinnamon powder.&lt;br /&gt;4.  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;2 tablespoons butter (unsalted) &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;2 cups dry roasted peanuts (unsalted! the non-oily kind, okay...) &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;10.5 oz mini marshmallows (I bought a bag and used a measuring cup) &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;&lt;o:p&gt; &lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;Method: &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;In a huge bowl, combine nuts and marshmallows to ensure they're evenly distributed. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;Heat up condensed milk and butter in a pot, and then melt chocolate chips into it, stirring well. Once all chips are melted, take off the heat. Fold in nuts and marshmallow till well mixed. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;Line a 9in by 13in pan with wax paper. Pour mixture into pan, spreading as evenly as you can. Chill minimum 2 hours until firm.(Meanwhile, you can lick the spoon.. tee hee!) &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;Remove from pan and peel off wax paper, cut into squares (I transferred mine into paper cups to make them look pretty&lt;span style=""&gt;  &lt;/span&gt;) and store in an airtight container @ room temperature. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;&lt;o:p&gt; &lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;Note: &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;If you have the patience and time, you can spoon them straight into paper cups before chilling them. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;If you're dubious about your marshmallows, you can substitute with rice crispies for a crunchy, intead of chewy, treat. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;&lt;o:p&gt; &lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;&lt;o:p&gt; &lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;This made about 48 of 1inch squares, 24 of which were 'edges', that I kept for self consumption.. tee hee! I am sure you'll get roughly 40-50 of them if you spoon them straight into paper cups (or if you trimmed off the edges not too widely). &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p style="font-family: trebuchet ms;" class="MsoNormal"&gt;&lt;span style="font-size:85%;"&gt;The result was a creamy, not too sweet, crunchy but also chewy chocolate candy. If I were to make them again, I think I'll try to add a bit of cocoa powder to make the chocolate darker (I prefer it slightly bitter). Roll hot dog in roti&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;&lt;span style="font-weight: bold;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p class="MsoNormal"&gt;&lt;span style="font-weight: bold;"&gt;2. SCRAMBLE EGG AND HOT DOG&lt;/span&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Potong hot dog into small pieces (potong 5) microwaved&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Put butter in microvable compartment, pecahkan telur (2 or 3). Dash of basils or Thyme.&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Kacau as and when. Dah siap.&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Roti, buang kerak. Sapukan campuran di atas. Potong roti into 4 little squares or triangles. NASI AND LAUK AS BEKAL&lt;/span&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Simple dish is sotong/udang/ayam masak tumis. If ayam - potong kecil no bones.&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Tumis bawang putih and merah and a bit cili. Masukkan ayam or sotong or udang.&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;  &lt;p class="MsoNormal"&gt;Sikit kicap manis and cili sos. Susun cocktail buah ke dalam acuan. Pukul putih telur sehingga kembang. Apabila agar-agar sudah masak, perlahankan api dan tuang telur putih tadi ke dalamnya. Kacau sebentar. Masukkan kedalam acuan yang mengandungi buah-buahan cocktail tadi. Biarkan sejuk dan simpan ke dalam peti sejuk. Untuk membuat sos kastard, pukul kuning telur dan susu cair kemudian masukkan gula dan masak. Bancuh tepung kastard, masukkan ke dalam campuran yang sedang dimasak dan kacau perlahan-lahan. Masukkan esen vanilla dan sedikit garam. Kacau sehingga masak. &gt;Masak agar-agar dengan air dan daun pandan hingga hancur. Campurkan sedikit pewarna. Tapiskan dan ketepikan dulu, biar suam-suam. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal" style="line-height: 150%;"&gt;&lt;span style="line-height: 150%;font-size:100%;" &gt;Sementara itu pukul putih telur dengan sedikit esen ros hingga kembang dan putih dan tak berair. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal" style="line-height: 150%;"&gt;&lt;span style="line-height: 150%;font-size:100%;" &gt;Setelah itu, masukkan ke dalam agar-agar yang masih suam tadi dan terus dipukul tanpa henti hingga agar-agar sebati dengan telur. Ketepikan. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal" style="line-height: 150%;"&gt;&lt;span style="line-height: 150%;font-size:100%;" &gt;Bancuhkan tepung kastad dengan air cocktail tadi.&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal" style="line-height: 150%;"&gt;&lt;span style="line-height: 150%;font-size:100%;" &gt;Didihkan air yang satu tin tadi dan masukkan bancuhan tepung kastad sambil terus dikacau tanpa henti. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal" style="line-height: 150%;"&gt;&lt;span style="line-height: 150%;font-size:100%;" &gt;Kemudian masukkan susu bercampur gula dan kuning telur tadi sambil terus dikacau hingga mendidih dan kelihatan berkilat. Jika terlalu pekat, tambahkan air panas. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal" style="line-height: 150%;"&gt;&lt;span style="line-height: 150%;font-size:100%;" &gt;Sesuaikan rasa dan angkat. &lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;  &lt;p class="MsoNormal" style="line-height: 150%;"&gt;&lt;span style="line-height: 150%;font-size:100%;" &gt;Kuah puding ini jangan terlalu pekat dan jangan terlalu cair. Seekor ayam dibersihkan / basuk dengan air garam sekali lalu secara keseluruhan, jangan dipotong.&lt;br /&gt;&lt;br /&gt;2. Masak air dalam periuk besar sehingga didih, sebaik sahaja air sudah masak dan mendidih, masukkan ayam seekor tadi ke dalam periuk dan tutup tudungnya dan padamkan api selama 5 minit.&lt;br /&gt;&lt;br /&gt;3. Selepas itu, keluarkan ayam tadi dan masak air itu semula sampai didih, lepas itu masukkan ayam itu sekali lagi ke dalam periuk dan tutup tudungnya, padamkan api terus selama beberapa minit lagi...&lt;br /&gt;&lt;br /&gt;4. Proses ini diulang banyak kali sehingga ayam masak. Cara mengetahui ayam itu masak atau tidak ialah dengan cara cucuk garpu atau benda tajam pada bahagian peha ayam, jika tiada darah keluar dan tidak melekat maka ayam itu BETUL-BETUL masak / Just nice....jangan masak lagi nanti over cook dah tidak lagi namanya Nasi Ayam Hainam.&lt;br /&gt;&lt;br /&gt;Sememangnya sukar menyediakan juadah ini sebab banyak kerja...nak melayan rebus ayam itu dah lebih sejam mahunya...itu sebab para peniaga tidak mungkin menyediakan nasi ayam mereka dengan cara ini, tetapi hasilnya adalah sangat berlainan. Kulit ayamnya just nice dan sungguh lembuh dan licin....tambahan pula bila dihidang dengan sedikit minyak bijan dilapek dengan beberapa keping timun nipis serta daud salad, maka terduduk diamlah abang-abang perut buncit kat rumah tu selepas pekana dengannya !&lt;br /&gt;&lt;br /&gt;Pak Amir teruskan sedikit penyediaan nasi dan hidangan ayam lagi....hasil rebusan air ayam ( dah jadi sup sekarang ) tadi akan digunakan untuk memasak nasi. As per rempahnya terpulang sebab ada yang menggunakan bawang putih dan halia pelbagai bahan lagi, itu ikut cita rasa masing-masing, yang pasti yang teralu banyak rempah sampai macam jadi nasi minya sudah. Yang paling simple ialah kuah sup dimasak nasi dan dicampurkan sedikit planta ke dalam nasi tersebut...sebab nak secucuk dengan ayam rebus tadi....masak nasi sampai masak. Kaum melayu masak nasi ayam amat berbeza jika dibandingkan dengan kaum cina masak nasi ayam ( maknanya nasi sahaja ), kaum melayu masak nasi ayam dengan banyak bahan hasilnya nasi itu enak dan kuah rasa, manakala nasi ayam cara kaun cina masak amat simple sebab dia nak pekana dengan ayam rebus tadi...asalkan nasinya gerpu sudah, yang paling penting ayam rebus itu sendiri.&lt;br /&gt;&lt;br /&gt;Selepas nasi dah siap, kita pergi ke hidangan ayam rebus tadi. Ayam dipotong seperti kedai buat tapi seeloknya asingkan tulang, ianya amat mudah dilakukan. Pakai pisau dan potong tapi JANGAN katuk-katuk macam kedia buat, ingat sebab ayam cara kita sekarang amat lembut dan kalau dikatuk maka buruk kelihatannya nanti...malahan kulit pun tanggal dan tidak kelihatan menarik. Makan ayam rebus style Hainam perlu dimakan bersama kulit ayam itu sendiri....itu nikmat namanya !&lt;br /&gt;&lt;br /&gt;Selepas ayam dipotong, ambil piring dan lapek dengan kepinang timun dulu. Timun dipotong senget memanjang dan bukan bulat. Cara potong timun menjejaskan mod " gigit " dan seterusnya tidak sedap dimakan...tidak terlalu nipis yer ! Selepas itu ayam dipotong tadi letak atas timun tadi, di bahagian atas ayam pula ada daun bawang dipotong pemanjang lebih kurang 2 inci, dan dari situ daun bawang itu hiris-hiris lagi seperti yang kat hotel buat tu...itu sangan penting, taborlah atas permukaan ayam rebus itu biar banyak tidak apa...akhir sekali siram sesudu dua soya sos ( kicap cair ) dan masukkan beberapa titik minat bijan ( jangan terlalu banyak nanti muak ).&lt;br /&gt;&lt;br /&gt;Sup yang digunakan untuk masak nasi tadi jangan habiskan, simpan untuk buat sup bila masan bersama nasi, didihkannya dan masukkan sedikit ajinomoto dan daun sup dipotong halus ditaborkan ke atasnya....penggunakan ajinomoto pada hari ini sangat biasa dan terus terang Pak Amir katakan masakan tanpa ajinomoto maka masakan itu tidak akan jadi enak....sedikit pun memadai dan kita tidak perlu segan jika masak menggunakan ajinomoto...we need it actually !&lt;br /&gt;&lt;br /&gt;Mengenai sos cili pula, Pak Amir pernah siarkannya dahulu...bahan-bahannya cili basah, dan banyak halia serta sedikit bawang putih, blander dengan sedikit air dan sebelum hidang masukkan jus limau lipis....powerrrrr....aaaa...cuba dulu tau jangan tengok simple saja yer !!! Masukkan garam, gula dan air asam limau tadi.&lt;br /&gt;Kacau sentiasa.
